Human Rights Day in South Africa is historically linked with 21 March 1960, the events of Sharpeville. On that day 69 people died and 180 were wounded when police fired on a peaceful crowd that had gathered in protest against the Pass laws.

This day marked an affirmation by ordinary people, rising in unison to proclaim their rights. It became an iconic date in our country’s history that today we commemorate as Human Rights Day as a reminder of our rights and the cost paid for our treasured human rights.

We’ve got the luck of the Irish at Medspresso™ We’ve got the luck of the Irish at Medspresso™!! 🍀🇮🇪 
Ahead of this weekend’s celebrations, we bring you a unique twist. Inspired by the Guinness drinking tradition of the Irish nation, we have put a healthier Medspresso™ spin on this St. Patrick’s Day classic! 

Iced Ginger Coffee Mocktail:

Ginger infused syrup
* 1 cup freshly grated ginger
* 1/2 cup  Honey
* 1 cup water

Creamy coffee mocktail
* 2 shots freshly brewed Tanzanian Peaberry Medspresso espresso
* 3-4 tablespoons honey
* 2-3 teaspoons fresh ginger extract
* 1/2 cup milk of choice (plus extra for frothing)
* brown sugar for rimming the glass

Step-by-step:
1. To make the ginger syrup, combine the honey & water over medium heat till it dissolves, add the grated ginger & cook till the mixture reduces & is syrupy in consistency. Strain the grated ginger & store the syrup in a mason jar in the refrigerator for up to 1 week. The syrup may be used for other beverages such as ginger flavored lemonades. or simply drizzled over a lemon or mango sorbet.
2. To make ginger extract, finely grate a 2-3 inch piece of ginger & squeeze out the juice. allow to stand for 5 minutes before decanting. Discard the white residue at the bottom.
3. In a pyrex mixing cup (or any other suitable container for mixing) , combine the Medspresso espresso, ginger root extract and the ginger syrup. stir well. Add the milk as per your preference & chill till really cold.
4. Heat the remaining milk for 30s in the microwave & whip well using an aerolater
5. Rim a mini martini glass with brown sugar, and decant into the glass. Spoon froth over the coffee, garnish with chocolate shavings or a piece of dark chocolate if desired, & serve!

Date Coffee Cake with Walnuts and Espresso Glaze i Date Coffee Cake with Walnuts and Espresso Glaze is full of flavour. Espresso soaked dates and toasted walnuts are the star of the show and the Espresso Glaze the literal icing on the cake!

Ingredients:

For the Date Coffee Cake-
• 2 ½ cups chopped dates
• 1 cup Medspresso Ethiopian/Kenyan espresso 
• 1 ½ tsp baking soda
• 1 ¾ cup all-purpose flour
• 1 tsp cinnamon
• ⅛ tsp nutmeg
• ¼ tsp salt
• ½ cup butter
• ¾ cup coconut sugar
• 1 large egg
• 1 Tbsp vanilla
• 1 cup walnuts toasted, coarsely chopped

For the Coffee Glaze-
• 1 tbsp. hot water
• ½ tsp. Medspresso Ethiopian/Kenyan espresso
• 2 cups coconut sugar
• 3 tbsp. melted butter
• 1 tsp vanilla
• ½ cup walnuts toasted and coarsely chopped

Step-by-step:

To Make the Date Coffee Cake:
1. Preheat oven to 180°C degrees.
In a large bowl, combine the dates, espresso, and baking soda. Set aside.
2. In a small bowl, combine the flour, cinnamon, nutmeg, and salt. Using a mixer beat the butter and sugars together.
3. Beat in egg and vanilla. Strain date mixture and set dates aside. Add the liquid from the date mixture alternately with the flour mixture (about three times) to the ingredients in the bowl; ending with the liquid. Scrape bowl well and beat just till smooth.
4. Fold in the dates and toasted walnuts.
Grease a 9x5-inch loaf pan with butter or baking spray. Cut parchment paper to fit the bottom and sides of the pan and spray the parchment.
5. Pour the batter into the greased and parchment paper-lined loaf pan.
Bake for 55-65 minutes, or until a toothpick inserted near the center comes out clean.
6. Cool for 20 minutes before removing from pan; peel off parchment and put on a wire rack to cool completely.

To Make the Coffee Glaze:
1. Combine the hot water with the espresso and stir until blended.
2. In a small bowl, whisk together the coconut sugar, melted butter, vanilla, and espresso. 
3. Drizzle the Espresso Glaze over the cooled bread and scatter the chopped walnuts on top. Let cool until the glaze sets before cutting and enjoy!
